The pods are sun-dried during the day, cured in wooden boxes overnight which yields opulent aromas of toasted hazelnut and date tannins.The vanilla is extracted into a blend of rum and bourbon, making it a versatile ingredient not only in the kitchen, but the bar as well. Use it in Manhattans, whiskey sours, piña coladas and espresso martinis to add a velvety texture and aroma.This collaborative product was created in tandem with Burlap & Barrel, a Public Benefit Corporation building new international spice supply chains that are equitable, transparent and traceable.

This richly fragrant Cloud Forest Cardamom Extract is made with cardamom seeds from Alta Verapaz, Guatemala. A beautiful golden color, this extract can be swapped 1:1 for vanilla extract. It also adds a pop of citrus to vinaigrettes and marinades. Cloud Forest Cardamom Extract is very useful in cocktails as well. Add a dash to a Gin Martini to accentuate the botanical structure of the spirit. Add a dash to a mojito to further spotlight the herbaceous mint. Shaken cocktails like a margarita and a whiskey sour are enhanced by the cardamom as well. You can’t go wrong with a tried and true classic. Given its designation as a classic category, orange bitters are exactly that. We flipped the script by toasting spices and burning sugar in house. Each dash is citrus forward with aromas of bright orange, toasted coriander, and caraway. Hailing from the Guatemalan cloud forest, our single origin cardamom beckons an herbaceous burst that mingles with citrus. A touch of burnt sugar adds a subtle, caramelized orange character to every bottle. From start to finish, these bitters foster a dynamic between tradition and modernity, adding brilliance and refinement to even the most classic and avant garde of cocktails.

Formerly Jamaican No. 2 BittersSometimes, the happiest accidents make for wonderful destinations. Highlighted by their brightness and acidity, these citrus bitters are the lovechild of our Ginger Allspice Bitters and a batch error. During R&D in 2009 we doubled the grapefruit, turning an “our bad” into an “it was meant to be”, with the realization that spiced grapefruit bitters deserve their own shine.Speaking of destinations, this infamous batch took inspiration from Jamaica Tea, which marries spices like ginger and clove with hibiscus during the holiday season. Whether your cocktail is up or on the rocks, you can turn up the Jamrock with each dash delivering grapefruit and hibiscus overtones plus underlying spice notes of allspice, ginger and vanilla.
